Wine should also be stored for some time (for two years Riserva) in oak barrels. Today, in the region of Chianti, a wine that corresponds to the current tastes is produced and, so that it is "dry". The old classic Chianti, however, was a storable wine fruity and relatively short. The Cantina Melini was founded in 1705 and is still a family company currently located in Gaggiano, Tuscany.
