It is a compact paste cheese traditionally produced with milk from sheep raised on pasture.
Obtained by coagulation of raw milk whole, adding pasta lamb rennet. It is of cylindrical shape with a weight that varies from 4 to 12 kg. On its surface it has printed features signs from the basket, traditionally used to mold it. The crust is subtle, rough, the color varies from yellowish-white, if it is cool, to a yellow amber if it is ripe. Paste is compact, white-yellowish, pungent and salty, pleasant smell, is used as a product of table or grated.
